Abigayle’s Corn Bread Waffles story:
Have you ever thrown kid’s toys or artwork away and later they found it in the trash? Well, that’s happened here, but this one takes the cake… or maybe the waffles. Here is the story about Abigayle’s Corn Bread Waffles. Abigayle and her maternal grandmother, Granny Bales made yummy corn bread waffles together. Abby loves them. Little Abigayle saved some of the corn bread waffles to take home from Utah to Idaho to save and give to her dad.
When she got home, she cut it up in small pieces on a little plate, and drizzled honey all over the top. Well, then in came her mom, throwing off her groove. Mom thought it was just leftovers and just tossed it in the trash. To say Abigayle was devastated, is an understatement. So they decided to call Granny, get the recipe, and make their own. They later found out they didn’t have corn meal on hand and made them from a box. Granny’s recipe is definitely better, but a box recipe works too.

Abigayle’s Corn Bread Waffles
Equipment
- 1 mini waffle maker
Ingredients
- 1 cup corn meal
- 1 cup all-purpose flour
- 2/3 cup sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 2 eggs
- 1/2 cup butter
Instructions
- Preheat your mini waffle maker
- In a large bowl, whisk cornmeal, flour, sugar, salt, and baking power
- Add milk, eggs, and butter
- Mix until combined
- Lightly grease waffle iron with cooking spray
- Pour about 1/4 cup into iron & cook until just golden brown
- Serve warm with honey, butter, or syrup
