SATURDAY BRUNCH: A Crepe Recipe

Sometimes Saturdays are for getting up and getting right to work – you know the “Saturday Chores”. And other times Saturdays are for those slow mornings, sleeping in, eating breakfast at 11 instead of 7, staying in your pajamas until 2, the epitome of Jack Johnson’s, Banana Pancakes song.

That was our Saturday. Brandon woke up extra early to go hunting with some buddies. And us {me + the minions}, we took it easy. There was no school to get to, no pressing matters {that couldn’t be procrastinated anyway,} so we decided to make some Crepes. This has long been my favorite crepe recipe + it’s so worth the calories. YOU HAVE TO MAKE THE FILLING WITH IT – it’s worth it, I promise.

Camden is obsessed with milk + Tylee on the other hand is not. I recently found these NESTLÉ® NESQUIK® Super Breakfast drinks and it has become such a game changer. Tylee loves them and it gives them that extra boost of protein and calcium in the morning and helps their bellies feel full longer.

Saturday Brunch Crepe Recipe:

  • 4 eggs
  • 1/2 cup melted butter
  • 1/3 cup sugar
  • 1 cup flour
  • 1 cup milk
  • 1/4 cup water
  • 1 teaspoon vanilla
  • 1 pinch of salt

Throw everything into a blender + mix. Refrigerate for about an hour – mix again before you cook. Heat your pan + spray with a little cooking spray. Cook the crepes until the edges just start to turn gold then flip and cook the second side for about 5ish seconds.

FILLING RECIPE:

  • 1 cup sour cream
  • 1 8 oz pkg. cream cheese {make sure it is soft at room temp}
  • 1 cup of powdered sugar
  • Mix all together

We love to top/fill our crepes with fresh fruit as well, so make sure to grab some berries.
