GRILLED TILAPIA | MANGO SALSA

HA!!! We call it chicken!

Okay, so Tylee is funny. If she says she doesn’t like something, she doesn’t like it  – even if she hasn’t tried it. Even if she tries it and DOES like it, she says she doesn’t. MAJOR EYEROLL HERE!

So with this dish we trick her. We just say it’s chicken and she eats it ha ha. Someday we will tell her {and usually we do tell her… just after she eats it all 😉 }

Here’s the recipe – {It’s pretty easy to throw together} but you HAVE to make the salsa and the rice to go with it or it’s not good. 

I also like to add extra lemon or limes to mine. Like I said I’m not a huge fish fan either.

We got this recipe from some of our dental school friends {thanks Carly 😉 } and then have just tweaked it for our taste.

FISH

Ingredients {fish}:

  • 2/3 c olive oil
  • 3 T lemon juice
  • 2 T parsley {we use dried but fresh would probably work better}
  • 3 cloves minced garlic
  • 2 t. basil
  • 2 t. pepper
  • 1 t. salt
  • 4 tilapia fillets

* Combine everything {minus the fish} in a bowl and whisk together. Put you fillets in a ziplock bag and cover with the mixture. Let marinade in the refrigerator for an hour.

SALSA

Ingredients {salsa}:

  • 4 large diced mangos
  • 1-2 avocados
  • 1 diced red pepper
  • 4 T. minced red onion
  • 3 T. cilantro
  • 1-2 jalapeños {depending on how hot you want it}
  • 5 T. lime juice
  • 2 T. lemon juice
  • salt + pepper to taste

*Mix all together and refrigerate until ready to eat.

Preheat your grill and remove the fish from the marinade {shake off the excess}. Discard the remainder marinade. Grill your fish until it is no longer translucent in center and can flake with a fork easily. We use a smoker to grill it so it takes us a little longer {about 15 min. on a normal grill it will take about 3-4 min per side depending on how thick it is. Serve the fillets topped with the salsa.

We also mix in some brown rice. We bake our rice in the oven at 350 for 50 min {2 c rice w/ 4c water} with garlic salt and olive oil.
